For the fish, there's cuisses provencal, pan-roasted frog legs covered in a ragout of tomatoes, onions, capers, olives, garlic and lemon juice, lotte au saffran, seared monkfish with creamy artichoke heart and saffron sauce, or cabillaud a la remoulade, cornmeal-crusted Pacific cod with key lime and red pepper remoulade.
