You can start one of the first course options, including wagyu beef carpaccio, with pickled shiitake, micro shiso, horseradish and nori wasabi, duck liver country pate, with mushrooms, confit, petit salad, grape tomatoes, and dijon vinaigrette, foie gras au torchon, pan-fried veal sweet breads with porcini risotto, Parmesan emulsion, and ramps, or asparagus and morels, with fried egg, asparagus salad and black truffles. You could also try something from their second course menu, including their cold caesar salad soap, with bacon foam, croutons, tomato concasses, and caesar dressing, young dandelion salad, with goat crouton, apple walnuts, and maple vinaigrette, or warm spinach salad with egg, oyster mushrooms, and bacon vinaigrette.
