Well, put that bag of nachos back into your apartment's kitchen cupboard, and turn 'Salsa's Greatest Hits' down on the stereo. It's time to make that short drive from your apartment to the Coyote Grill, Poughkeepsie's destination for authentic Tex-Mex and a lot more. Far from your typical run-of-the-mill chain restaurant, this independently owned establishment is classy yet laid back, perfect for casual dates and family nights out. Fajitas, tacos and burritos are all, of course, offered in head-spinning portions, topped with onions, peppers, salsa verde and the requisite guacamole, all sided with a hearty spooning of black beans and rice.
