There are few cuisines more ably represented within the Tampa area than Spanish, although any fellow apartment-ite will gladly tell you that the quality and emphasis placed upon traditional cooking techniques varies almost as much as the ocean waves. Why risk it? Choose Columbia Restaurant and relax in confidence knowing you have chosen the best. Lauded for the high vaulted ceiling and stunning floral-laden central fountain of its patio great room, Columbia is truly designed to impress. The Don Quixote dining room offers an elegant staircase (dating back to 1935), enormous crystal lighting centerpiece, and comfortable tables for parties of four, while the aptly dubbed Red Room is perfect for private events or larger parties. An emphasis is placed upon Tapas sharing and seafood, from their Scallops Casimiro (tossed with seasoned bread crumbs and white wine) to the Langostinos (prawns direct from Panama doused with their homemade '1905' dressing), although full-fledged entrees ranging from delicate chicken to rich and flavorful steaks are more than encouraged by the lively staff. Paella, the 'national dish of Spain', combines rice and a variety of meat and spices for one of the most memorable of meals, although be forewarned that preparation takes thirty minutes at a minimum. But what was that about good things coming to those who wait?
